I’ve been writing a few essays for my SAT class and I seem to be able to find about any example from Twilight that fits the prompt. I’m just wondering if it would be a bad idea. What do you think?

There’s a misconception that all examples on the SAT essay have to be from Shakespeare or from another "fancy" source.
It’s just not true. Instead, your best bet is to use examples that you know and are interesting to you. If this means "Twilight", then, for the love of god, use it.
It’s much better than wasting your time, sitting there nervously, trying to remember something from Shakespeare that you were forced to read three years ago.
Just make sure that:
1) you avoid summarizing the plot (get right to the example)
2) the example strongly supports your argument
3) the example is as specific as you can make it.
